1 loaf of day-old bread (about 10-12 cups), cubed

2 tablespoons olive oil

1 medium onion, diced

3 celery stalks, diced

3 cloves garlic, minced

2 medium apples (Granny Smith or Honeycrisp), cored and diced

1 cup low-sodium vegetable broth or chicken broth

1/2 cup unsalted butter (1 stick), melted

1 tablespoon fresh sage, finely chopped (or 1 teaspoon dried sage)

1 teaspoon fresh thyme, finely chopped (or 1/2 teaspoon dried thyme)

1/2 teaspoon ground cinnamon

Salt and pepper to taste

1/2 cup dried cranberries or raisins (optional)

1/2 cup walnuts or pecans, chopped (optional)

Fresh parsley, for garnish

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bread: Spread the cubed bread on a large baking sheet and toast in the oven for about 10-15 minutes, or until golden brown. Remove and set aside to cool.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and celery; sauté for about 5-7 minutes until they are soft and translucent. Add the minced garlic and diced apples, sautéing for an additional 2-3 minutes until fragrant.

        Mix Flavors: In a large bowl, combine the toasted bread cubes with the sautéed vegetable mixture. Pour in the melted butter and vegetable broth. Add the chopped sage, thyme, cinnamon, salt, and pepper. If using, mix in the dried cranberries and nuts.

          Combine: Gently fold everything together until the bread is evenly coated in the butter and broth. The mixture should be moist but not soggy; adjust with more broth if necessary.

            Bake: Transfer the stuffing to a greased 9x13 inch baking dish. Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 15-20 minutes, until the top is golden brown and crispy.

              Serve & Garnish: Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
