1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1/4 cup fresh lemon juice

Zest of 2 lemons

1 teaspoon vanilla extract

Instructions
 

Prepare the Crust:

    - In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until well mixed and the crumbs are evenly coated.

      - Divide the mixture among your serving jars (about 6-8 jars, depending on size) and press it down firmly to create an even layer at the bottom.

        Make the Cheesecake Filling:

            - Gradually add in the powdered sugar, beating until fully incorporated.
