Ingredients
  

1 lb (450g) boneless, skinless chicken thighs

1/4 cup honey

1/4 cup Dijon mustard

2 cloves garlic, minced

2 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the honey, Dijon mustard, minced garlic, olive oil, apple cider vinegar, dried thyme, salt, and black pepper until well combined.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or preferably, up to 2 hours.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Bake the Chicken: Remove the chicken from the marinade and place the thighs in a single layer in a baking dish. Pour any remaining marinade over the chicken.

          Cook: Bake in the preheated oven for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the juices run clear.

            Serve: Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley if desired. Serve with steamed vegetables or a fresh salad.
