Healthy & Crunchy Granola Bars

2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans, chopped)

1/2 cup sunflower seeds

1/2 cup honey or maple syrup

1/4 cup natural peanut butter or almond butter

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup dried fruits (raisins, cranberries, apricots, chopped)

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, mixed nuts, sunflower seeds, dried fruits, and cinnamon (if using). Stir until evenly mixed.

      Prepare Wet Ingredients: In a small saucepan over low heat, combine the honey (or maple syrup) and nut butter. Stir until melted and smooth. Remove from heat and add vanilla extract and salt.

        Combine Mixtures: Pour the warm wet mixture over the dry ingredients. Mix well until all dry ingredients are fully coated.

          Spread in Pan: Transfer the mixture into the prepared baking dish. Press it down firmly and evenly with a spatula or your hands to ensure it's tightly packed.

            Bake: Bake in the preheated oven for about 20-25 minutes, or until the edges start to turn golden brown.

              Cool and Cut: Remove from the oven and let it cool in the pan for about 10 minutes. Using the parchment overhang, lift it out of the pan to cool completely on a wire rack. Once cool, cut into bars or squares.

                Store: Store your granola bars in an airtight container at room temperature for up to a week, or in the fridge for an extra crunchy texture.
