Ingredients

4 cups fresh watermelon, diced and seeded

1 tablespoon honey (or agave syrup for a vegan option)

2 tablespoons fresh lime juice

Pinch of sea salt

Optional: Fresh mint leaves for garnish

Optional: Greek yogurt or coconut cream for a creamy texture

Instructions

Prepare the Watermelon: Start by cutting your watermelon into small cubes, ensuring all seeds are removed. You can use a seedless watermelon for convenience.

Blend the Ingredients: In a blender or food processor, combine the diced watermelon, honey (or agave syrup), lime juice, and a pinch of sea salt. Blend until smooth. If you prefer a creamier texture, mix in Greek yogurt or coconut cream at this stage.

Taste and Adjust: Taste the mixture and adjust sweetness or acidity as needed. Feel free to add more honey or lime juice to achieve your desired flavor.

Pour into Molds: Carefully pour the blended watermelon mixture into popsicle molds, leaving a little space at the top as the mixture will expand when frozen.

Insert Sticks: If using popsicle sticks, place them in the center of each mold. If your molds come with lids, simply attach the lids without sticks.

Freeze: Transfer the molds to the freezer. Let them freeze for at least 4 to 6 hours, or until solid.

Release the Pops: Once fully frozen, remove the pops from the molds. To help release them, run the outside of the molds under warm water for a few seconds.

Garnish and Serve: For an extra touch, garnish with fresh mint leaves before serving. Enjoy your refreshing watermelon pops on a warm day!
