1 lb beef chuck, cut into bite-sized pieces

3 large onions, thinly sliced

3 cloves garlic, minced

4 cups beef broth

1 tsp dried thyme

1/2 tsp black pepper

2 tbsp olive oil

2 tbsp butter

2 tbsp all-purpose flour

1 cup egg noodles

1 cup Gruyère cheese, grated

1/2 cup Parmesan cheese, grated

Salt to taste

Fresh parsley for garnish (optional)

Instructions
 

Sear the Beef: In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Season the beef with salt and pepper. Add the beef to the pot and sear until browned on all sides. Remove the beef and set it aside.

    Caramelize the Onions: In the same pot, add the remaining olive oil and butter. Add the sliced onions and cook over medium heat for about 15-20 minutes, stirring often, until they are caramelized and golden brown.

      Add Garlic and Flour: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Sprinkle the flour over the onions and mix well. Cook for another minute to cook off the raw flour taste.

        Combine Ingredients: Gradually pour in the beef broth while scraping the bottom of the pot to deglaze. Add in the thyme and the seared beef. Bring the mixture to a simmer.

          Simmer: Cover the pot and let it simmer for about 30 minutes, allowing the flavors to meld. Check occasionally and stir.

            Cook the Noodles: In a separate pot, cook the egg noodles according to the package instructions. Drain and set aside.

              Combine Noodles: After simmering, add the cooked noodles to the beef and onion mixture. Stir well to combine.

                Add Cheese: Mix in the Gruyère and Parmesan cheeses, allowing them to melt and create a creamy consistency. Taste and adjust seasoning if necessary.
