4 flour tortillas (10-inch)

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1 cup roasted Hatch green chiles, diced (fresh or canned)

1/2 cup sliced green onions

1/2 cup sour cream (for serving)

1/4 cup fresh cilantro, chopped (for garnish)

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil (for frying)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded Monterey Jack cheese, shredded cheddar cheese, diced Hatch chiles, sliced green onions, garlic powder, cumin, salt, and pepper. Stir until well mixed.

    Assemble the Quesadillas: Place a flour tortilla on a clean surface. Spread a generous amount of the cheese and chile mixture evenly across half of the tortilla. Fold the tortilla over to cover the filling.

      Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat. You can use a non-stick or cast-iron skillet for best results.

        Cook the Quesadillas: Carefully place one folded quesadilla in the skillet. Cook for about 3-4 minutes on one side or until it’s golden brown and crispy. Carefully flip the quesadilla using a spatula and add a bit more oil to the pan if necessary. Cook for another 3-4 minutes on the other side until golden brown and the cheese is melted.

          Repeat: Remove the cooked quesadilla from the skillet and keep it warm in a towel or on a plate. Add another tablespoon of olive oil to the skillet if needed, and repeat the process with the remaining tortillas and filling.

            Slice and Serve: Once all quesadillas are cooked, cut each one into wedges. Serve warm with sour cream on the side and garnish with fresh cilantro.
