2 medium zucchinis, grated

1 cup russet potatoes, peeled and grated

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (Panko for extra crunch)

1 large egg, beaten

2 tablespoons fresh chives, chopped (or green onions)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Olive oil spray or oil for frying

Prep the Zucchini and Potatoes:

    - Grate the zucchinis and potatoes using a box grater. Place them in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure your tater tots are crispy.

      Mix Ingredients:

        - In a large mixing bowl, combine the squeezed zucchini and potatoes. Add the shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, beaten egg, chopped chives, garlic powder, and onion powder. Season with salt and pepper. Mix everything until well combined.

          Shape the Tater Tots:

            - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Take a spoonful of the mixture and shape it into small tater tot-sized cylinders or balls, pressing tightly to hold their shape. Place them on the prepared baking sheet.

              Bake or Fry:
