2 medium zucchinis, grated

1 cup shredded mozzarella cheese

1/2 cup grated cheddar cheese

1/4 cup cream cheese, softened

4 whole wheat tortillas

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil (for cooking)

Optional: diced tomatoes, bell peppers, or spinach for extra veggies

Sour cream or salsa for serving

Instructions
 

Prep the Zucchini: Start by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture. This step is crucial to prevent soggy quesadillas.

    Mix the Filling: In a mixing bowl, combine the drained zucchini, mozzarella cheese, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. If you're adding extra veggies like diced tomatoes or bell peppers, fold them in as well.

      Assemble the Quesadillas: Take one tortilla and spread a generous portion of the filling on half of the tortilla. Fold the tortilla in half to create a half-moon shape.

        Cook the Quesadillas: Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the folded quesadilla to the skillet. Cook for about 3-4 minutes on one side or until golden brown and crispy. Carefully flip it over and add another tablespoon of olive oil if needed, cooking for another 3-4 minutes on the other side.

          Keep Warm: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling.

            Serve: Once all quesadillas are cooked, cut them into triangles and serve warm with sour cream or salsa on the side for dipping.
