2 large zucchini

4 whole wheat pitas

1 cup marinara sauce (or pizza sauce)

1 cup shredded mozzarella cheese (or your favorite cheese)

1/2 cup cherry tomatoes, halved

1/4 cup black olives, sliced

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil for drizzling

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Zucchini: Wash the zucchini thoroughly. Slice them into thin rounds, approximately 1/4 inch thick. You can also use a spiralizer for a fun twist.

      Sauté the Zucchini: In a skillet, heat a drizzle of olive oil over medium heat. Add the zucchini slices and sprinkle with salt, pepper, garlic powder, and half of the oregano. Sauté for about 3-4 minutes until slightly softened. Remove from heat and set aside.

        Assemble the Pitas: Place the whole wheat pitas on a baking sheet. Spread a generous amount of marinara sauce over each pita, leaving a small border around the edges.

          Add Toppings: Evenly distribute the sautéed zucchini over the sauce on each pita. Next, layer on the cherry tomato halves and sliced black olives. Top with shredded mozzarella cheese and sprinkle the remaining oregano on top.
