Zucchini Pasta with Creamy Avocado Sauce

4 medium zucchinis

2 ripe avocados

1 cup fresh basil leaves

2 cloves garlic

½ cup cherry tomatoes, halved

2 tablespoons lemon juice

1 tablespoon olive oil

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper (adjust to taste)

Pinch of red pepper flakes (optional)

Grated Parmesan cheese (for garnish, optional)

Instructions
 

Prepare the Zucchini Noodles: Using a spiralizer or a vegetable peeler, create zucchini noodles (zoodles). If using a peeler, make long strips and then slice them into thinner noodles. Set aside in a large bowl.

    Make the Creamy Avocado Sauce: In a food processor, combine the ripe avocados, fresh basil, garlic cloves, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy. If the sauce is too thick, add a little water to reach your desired consistency. Taste and adjust seasoning as desired.

      Combine Zoodles and Sauce: Pour the creamy avocado sauce over the prepared zoodles. Using tongs, gently toss until all the noodles are well coated with the sauce.

        Add Cherry Tomatoes: Fold in the halved cherry tomatoes into the zoodles and sauce mixture for a burst of sweetness.
