2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably Panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Cooking spray or olive oil for greasing

Optional: Fresh parsley for garnish

Optional: Marinara sauce for dipping

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.

    Prepare the Zucchinis: Wash and dry the zucchinis. Slice them into thin rounds, about 1/4 inch thick. If you prefer crispier results, you can slice them even thinner.

      Create the Coating Mix: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, dried oregano, onion powder, salt, and black pepper. Mix until well combined.

        Prepare the Egg Wash: In another bowl, crack the eggs and whisk them until they are slightly frothy.

          Coat the Zucchini Slices: Dip each zucchini slice first into the egg wash, allowing the excess to drip off. Then, coat the slice in the breadcrumb and Parmesan mixture, pressing gently to ensure the coating adheres well. Place the coated slices on the prepared baking sheet in a single layer.
