3 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

Fresh basil leaves for garnish (optional)

Instructions
 

Prep the Zucchini: Preheat your oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips about 1/4 inch thick. You can use a mandoline slicer or a sharp knife for even slices.

    Cook the Zucchini: Lightly grill or sauté the zucchini strips in a non-stick skillet for about 2-3 minutes on each side to soften them slightly. This will make them easier to roll. Set aside to cool.

      Prepare the Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, oregano, garlic powder, salt, and black pepper. Mix until well combined.

        Assemble the Rolls: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take a zucchini slice, add a spoonful of the cheese mixture to one end, and roll it up tightly. Place the zucchini roll seam side down in the baking dish. Repeat this until all the zucchini slices and filling are used.

          Top with Sauce and Cheese: Pour the remaining marinara sauce over the zucchini rolls, and sprinkle the rest of the mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Serve: Let the lasagna rolls cool for a few minutes before serving. Garnish with fresh basil leaves if desired. Enjoy!
