Zucchini Lasagna Roll-Ups

3 medium zucchinis, sliced lengthwise into thin strips

1 cup ricotta cheese

1 cup shredded mozzarella cheese (divided, half for filling, half for topping)

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (homemade or store-bought)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Using a mandoline or sharp knife, slice the zucchinis lengthwise into thin (about 1/8 inch) strips. Sprinkle them with salt and let them sit for about 15 minutes to release excess moisture. Pat them dry with a paper towel.

      Make the Filling: In a large bowl, combine the ricotta cheese, half the shredded mozzarella, Parmesan cheese, minced garlic, egg, oregano, basil, salt, and pepper. Mix until well combined.

        Assemble the Roll-Ups: Spread a thin layer of marinara sauce at the bottom of a 9x13 inch baking dish. Take a zucchini slice, spread a couple of tablespoons of the cheese filling on one side, and roll it up tightly. Place the roll-up seam side down in the baking dish. Repeat until all zucchini slices are filled and rolled.

          Top with Sauce and Cheese: Once all the zucchini rolls are in the dish, pour the remaining marinara sauce over the top, ensuring all the roll-ups are covered. Sprinkle the rest of the mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then remove the foil and bake for another 15 minutes, or until the cheese is bubbly and golden.

              Rest and Serve: Allow the lasagna roll-ups to rest for about 5 minutes before serving. Garnish with fresh basil leaves if desired.
