3 medium zucchinis, sliced thinly lengthwise

1 pound ground turkey or beef

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional, for spice)

Salt and pepper to taste

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cups fresh spinach leaves

1 cup mixed salad greens

Fresh basil or parsley for garnish

Instructions
 

Prepare the Zucchini: Preheat your oven to 400°F (200°C). Lay the zucchini slices on paper towels, sprinkle with a little salt, and let sit for about 15 minutes to draw out moisture. Pat the slices dry afterwards.

    Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute. Then, add the ground turkey or beef, breaking it up with a spoon, and cook until browned. Drain excess fat if necessary.

      Make the Sauce: Stir in the crushed tomatoes, oregano, basil, red pepper flakes, salt, and pepper to the meat mixture. Allow it to simmer on low heat for about 10 minutes, so the flavors meld together.

        Assemble the Salad Bowl: In a large bowl, start layering: place half of the fresh spinach and salad greens at the bottom. Next, add a layer of the meat sauce followed by a layer of the zucchini slices. Dollop on half of the ricotta cheese and sprinkle half of the mozzarella cheese.

          Repeat Layers: Continue adding another layer of greens, meat sauce, zucchini, ricotta, and then top off with the remaining mozzarella and Parmesan cheese.

            Bake: Cover the assembled salad bowl with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
