Zucchini Lasagna Recipe Quesadillas for Kids

2 medium zucchinis, sliced into thin ribbons

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1 cup marinara sauce

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

4 whole wheat tortillas

Olive oil for brushing

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Slice the zucchinis into thin ribbons using a vegetable peeler or mandoline. Sprinkle with a little salt and let them sit for 10 minutes to draw out moisture, then pat dry with paper towels.

      Mix the Cheese Filling: In a medium bowl, combine ricotta cheese, half of the shredded mozzarella, dried oregano, garlic powder, salt, and black pepper. Mix well until fully combined.

        Assemble the Quesadillas: Place a tortilla on a clean surface. Spread a thin layer of marinara sauce on one half. Layer with zucchini ribbons, followed by a generous portion of the ricotta mixture, and sprinkle some of the remaining mozzarella on top. Fold the tortilla in half to close.

          Cook Quesadillas: Heat a large skillet over medium heat. Lightly brush the skillet with olive oil. Cook the quesadilla for about 3-4 minutes on one side until golden brown. Carefully flip and cook for an additional 3-4 minutes until the cheese is melted and the other side is golden.

            Bake for Extra Crispiness: Transfer the quesadillas to a baking sheet and bake in the preheated oven for about 5 minutes to make them extra crispy.

              Slice and Serve: Remove from the oven, let cool for a minute, then slice into wedges. Serve warm with extra marinara sauce for dipping and garnish with fresh basil leaves if desired.
