Zucchini Fritters with Herb Yogurt Dip

Ingredients
  

2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/4 cup grated Parmesan cheese

2 large eggs, beaten

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

2 tablespoons chopped fresh basil

2 tablespoons chopped fresh parsley

1/4 cup vegetable oil (for frying)

For the Herb Yogurt Dip:

1 cup plain Greek yogurt

1 tablespoon lemon juice

1 garlic clove, minced

1 tablespoon chopped fresh dill

Salt and pepper to taste

Instructions
 

Prepare the Zucchini: In a large bowl, grate the zucchinis and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture. After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the grated zucchini.

    Make the Batter: In a separate bowl, combine the drained zucchini, flour, Parmesan cheese, beaten eggs, black pepper, garlic powder, onion powder, basil, and parsley. Mix until just combined.

      Heat the Oil: In a large non-stick skillet, heat the vegetable oil over medium-high heat. You want enough oil to coat the bottom of the skillet.

        Fry the Fritters: Using a tablespoon or a small cookie scoop, drop dollops of the zucchini mixture into the hot oil. Flatten each fritter slightly with the back of the spoon. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Work in batches to avoid overcrowding the pan.

          Drain the Fritters: Once cooked, transfer the fritters to a paper towel-lined plate to absorb any excess oil.

            Prepare the Herb Yogurt Dip: While the fritters are cooking, in a small mixing bowl, combine the Greek yogurt, lemon juice, minced garlic, dill, salt, and pepper. Stir well until all ingredients are evenly incorporated.

              Serve: Arrange the zucchini fritters on a platter, serve warm with the herb yogurt dip on the side. Enjoy!
