Zucchini Fritter BLT Wraps

1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese (optional)

1 large egg

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Freshly cracked black pepper, to taste

Olive oil, for frying

For the Wraps:

4 large whole wheat or spinach tortillas

8 slices of crispy bacon

1 large tomato, sliced

Leafy greens (such as spinach or arugula)

1/4 cup mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon fresh lemon juice

Salt and pepper, to taste

Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth, sprinkle with salt, and let it sit for about 10-15 minutes. This will help draw out excess moisture.

    Make the Fritter Batter: After resting, squeeze out as much moisture as you can from the zucchini. In a large bowl, mix the drained zucchini with flour, Parmesan cheese (if using), egg, garlic powder, onion powder, and black pepper until fully combined.

      Cook the Fritters: Heat a tablespoon of olive oil in a non-stick skillet over medium heat. Drop spoonfuls of the zucchini mixture into the pan, flattening them slightly to form fritters. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed and repeat with the remaining mixture.

        Prepare the Wrap Sauce: In a small bowl, mix together the mayonnaise and lemon juice. Season with salt and pepper to taste, and set aside.
