2 medium zucchinis, grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

4 slices of your favorite cheese (e.g., cheddar, gouda, or pepper jack)

1 tbsp olive oil (for grilling)

Fresh herbs (like basil or parsley) for garnish (optional)

Instructions
 

Prepare the Zucchini: Start by grating the zucchinis using a box grater. Once grated, place them in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. This step is crucial for a crispy crust!

    Mix the Dough: In a large bowl, combine the squeezed zucchini, shredded mozzarella, grated Parmesan, egg, garlic powder, onion powder, salt, and pepper. Mix well until all the ingredients are combined into a thick, cohesive mixture.

      Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
