1 medium zucchini (about 1 cup grated)

1 cup all-purpose flour

½ cup rolled oats

½ cup brown sugar, packed

¼ cup granulated sugar

½ teaspoon baking soda

¼ teaspoon baking powder

½ teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

¼ teaspoon salt

½ cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

½ cup walnuts, chopped (optional)

½ cup dark chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Grate the zucchini using a box grater or food processor, then use a clean kitchen towel to squeeze out excess moisture. Set aside.

      In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

        Beat in the egg and vanilla extract until well-combined.

          In another bowl, whisk together the flour, rolled oats, baking soda, baking powder, cinnamon, nutmeg, and salt.

            Gradually combine the dry ingredients with the wet mixture, stirring until just combined.

              Gently fold in the grated zucchini, walnuts, and chocolate chips if using until evenly distributed throughout the dough.

                Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

                  Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the center looks set.

                    Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
