1 tsp salt

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 large egg, beaten

2 cloves garlic, minced

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional for heat)

1/4 cup fresh parsley, chopped

Prepare the Zucchini: In a large mixing bowl, grate the zucchinis. Sprinkle them with salt and let them sit for about 10 minutes. This will draw out excess moisture, ensuring crispy fritters.

    Remove Excess Water: After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out the moisture from the grated zucchini. This step is crucial for achieving a nice, crispy texture in the fritters.
