Zesty Quinoa Corn Salad

Ingredients
  

1 cup quinoa, rinsed and drained

2 cups low-sodium vegetable broth or water

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 medium cucumber, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Zest and juice of 2 limes

3 tablespoons olive oil

1 tablespoon honey or maple syrup

1 teaspoon ground cumin

Salt and pepper to taste

Optional garnish: sliced avocado or crumbled feta cheese

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil over medium heat. Reduce the heat to low, cover, and let simmer for about 15 minutes, or until the quinoa is fluffy and all the liquid is absorbed. Remove from heat and allow to cool slightly.

    Prepare the Salad Base: In a large mixing bowl, combine the black beans, corn, diced red bell pepper, cucumber, red onion, jalapeño (if using), and chopped cilantro.

      Make the Dressing: In a small bowl, whisk together the lime zest, lime juice, olive oil, honey (or maple syrup), ground cumin, and a pinch of salt and pepper until well combined.

        Combine Ingredients: Once the quinoa has cooled, fluff it with a fork and then add it to the large mixing bowl with the salad base. Pour the dressing over the salad and toss gently until everything is well coated.

          Season to Taste: Taste the salad and adjust the seasoning by adding more salt, pepper, or lime juice if desired.

            Chill and Serve: For the best flavor, refrigerate the salad for at least 30 minutes before serving. This allows the ingredients to meld together. Serve chilled or at room temperature. Garnish with avocado slices or crumbled feta cheese if desired.
