2 cups grated zucchini (about 2 medium zucchini)

1 cup grated carrots (about 2 medium carrots)

1 cup finely chopped bell peppers (any color)

½ cup finely chopped red onion

1 cup breadcrumbs (preferably whole wheat)

½ cup grated Parmesan cheese

2 large eggs

3 cloves garlic, minced

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

Olive oil, for frying

Fresh parsley, chopped (for garnish)

Prep the Veggies: Place the grated zucchini in a clean kitchen towel or cheesecloth. Squeeze the moisture out until it's as dry as possible. This step is crucial for crispy fritters!
