1 lb boneless, skinless chicken thighs

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup fresh cilantro, chopped

For the Taco Assembly:

8 small corn or flour tortillas

1 cup red cabbage, thinly sliced

1 ripe avocado, sliced

1/2 cup crumbled queso fresco or feta cheese

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Hot sauce (optional)

Marinate the Chicken: In a medium bowl, combine the lime juice, olive oil, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Add the chicken thighs and coat them well with the marinade. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

    Cook the Chicken: Preheat a grill or a grill pan over medium-high heat. Once hot, remove the chicken from the marinade, letting any excess drip off. Grill the chicken for about 5-7 minutes on each side, or until cooked through and internal temperature reaches 165°F (75°C). Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing.

      Prepare the Tacos: While the chicken rests, warm the tortillas in a skillet or directly on the grill for about 30 seconds on each side until pliable.

        Assemble the Tacos: Slice the grilled chicken into strips. On each tortilla, layer the cooked chicken, shredded red cabbage, avocado slices, and crumbled queso fresco. Finish with a sprinkle of fresh cilantro.
