1 cup cooked jasmine rice

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons lime zest

2 tablespoons honey

1 tablespoon soy sauce (or tamari for a gluten-free option)

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

8 large romaine or butter lettuce leaves

1/2 cup diced cucumber

1/2 cup shredded carrots

1/4 cup chopped fresh cilantro

1/4 cup diced avocado (optional)

Slices of jalapeño (optional for heat)

Marinate the Chicken: In a bowl, whisk together lime juice, lime zest, honey, soy sauce, minced garlic, cumin, chili powder, salt, and pepper. Add the chicken breasts to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade, letting excess drip off.
