4 boneless, skinless chicken breasts

1/4 cup olive oil

1/4 cup fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

2 teaspoons dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup plain Greek yogurt (for serving)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Marinade: In a mixing bowl, combine the olive oil, fresh lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, smoked paprika, salt, and black pepper. Whisk together until well blended.

    Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 2-4 hours for maximum flavor.

      Preheat the Grill: When you're ready to cook, preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and ashy.

        Grill the Chicken: Remove the chicken from the marinade and let any excess drain off. Place the chicken on the grill. Cook for about 6-8 minutes on one side without flipping until you have nice grill marks. Flip and grill for another 6-8 minutes, or until the internal temperature reaches 165°F (75°C).
