1/4 cup fresh cilantro, chopped

For the Creamy Slaw:

1 cup red cabbage, shredded

1/2 cup carrots, shredded

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

Zest and juice of 1 lime

For Serving:

Corn or flour tortillas

Extra lime wedges

Chopped cilantro for garnish

Avocado slices (optional)

Instructions

Marinate the Shrimp: In a bowl, combine olive oil, lime zest, lime juice, minced garlic, cumin, chili powder, paprika, salt, and pepper. Add the shrimp and toss to coat. Let it marinate for at least 15 minutes while you prepare the slaw.

Prepare the Creamy Slaw: In a large bowl, mix shredded green cabbage, red cabbage, and carrots. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, honey, lime zest, lime juice, salt, and pepper. Pour the dressing over the cabbage mixture and toss until combined. Set aside to let the flavors meld.

Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook.

Warm the Tortillas: In the same skillet, briefly warm the corn or flour tortillas for about 30 seconds on each side until pliable.

Assemble the Tacos: Place a few shrimp on each tortilla, add a generous scoop of creamy slaw, and top with chopped cilantro and avocado slices if desired. Serve immediately with lime wedges on the side.
