Zesty BBQ Chicken Tenders

1 lb (450g) chicken tenders

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup BBQ sauce (your choice)

2 tbsp honey

1 tbsp apple cider vinegar

2 tbsp olive oil

Fresh parsley for garnish

Marinate the Chicken: In a medium bowl, combine the chicken tenders and buttermilk. Allow to marinate for at least 1 hour in the refrigerator (or overnight for best flavor).

    Prepare the Breading Mixture: In a separate large bowl, mix the flour, cornstarch, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper until well combined.

      Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or spray it lightly with cooking spray.

        Coat the Chicken: Remove the chicken from the buttermilk marinade. Let any excess liquid drip off, then dredge each tender in the flour mixture, pressing gently to ensure it adheres well.

          Bake the Chicken: Arrange the coated chicken tenders on the prepared baking sheet. Drizzle with olive oil or spray lightly with cooking spray. Bake for 15-20 minutes, flipping halfway through, until golden brown and cooked through.

            Prepare Zesty BBQ Sauce: While the chicken is baking, in a small saucepan over medium heat, combine the BBQ sauce, honey, and apple cider vinegar. Stir occasionally until warmed through and slightly thickened, about 3-5 minutes.

              Coat the Chicken with Sauce: Once the chicken tenders are done baking, remove them from the oven, and brush the warm zesty BBQ sauce generously over them. Return to the oven for an additional 3-5 minutes to set the sauce.
