Zesty Baked Chicken & Rice Casserole

1 lb boneless, skinless chicken thighs, diced

1 cup long-grain white rice

2 cups chicken broth

1 cup diced bell peppers (red and green)

1 cup frozen corn, thawed

1 small onion, finely chopped

3 cloves garlic, minced

1 can (10.5 oz) cream of chicken soup

1 tablespoon taco seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped (for garnish)

Zest of 1 lime

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken: In a large skillet over medium heat, add the diced chicken thighs. Season with salt, pepper, and taco seasoning. Cook for about 5-7 minutes, until browned and cooked through. Remove from heat and set aside.

      Sauté Vegetables: In the same skillet, add a little oil if necessary, then sauté the chopped onion, bell peppers, and garlic for 3-4 minutes, until fragrant and softened.

        Combine Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed vegetables, rice, chicken broth, cream of chicken soup, corn, and lime zest. Mix until everything is well combined.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

              Add Cheese and Finish Baking: After 30 minutes, remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and return it to the oven uncovered. Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

                Garnish and Serve: Once done, remove from the oven, and let it sit for 5 minutes. Sprinkle with freshly chopped cilantro before serving. Serve with lime wedges on the side for extra zest!
