Ingredients

4 cups of seedless watermelon, cubed and frozen

1/2 cup freshly squeezed lime juice (about 4-6 limes)

1/4 cup honey or agave syrup (adjust sweetness to taste)

1/2 cup coconut water (or regular water for a lighter option)

1-2 cups ice cubes (optional for a thicker texture)

Mint leaves for garnish (optional)

Instructions

Prepare the Watermelon: If you haven’t done so already, cube the seedless watermelon and freeze it for at least 4 hours or until solid.

Juice the Limes: While the watermelon is freezing, roll the limes on a counter to soften them. Cut them in half and juice them to get approximately 1/2 cup of lime juice. Strain if you prefer a pulp-free slushie.

Blend Ingredients: In a high-speed blender, combine the frozen watermelon cubes, lime juice, honey or agave syrup, and coconut water.

Adjust Consistency: Blend on high until smooth. Check the texture: if you want a thicker slushie, add the ice cubes gradually and blend again until you reach your desired consistency.

Taste and Adjust: Taste the slushie and adjust sweetness by adding more honey/agave or a little more lime juice for extra tartness, if desired. Blend again briefly to mix.

Serve: Pour the watermelon lime slushie into chilled glasses. Garnish with fresh mint leaves for a refreshing touch.

Enjoy: Serve immediately and enjoy your refreshing, icy treat!
