Watermelon Feta Skewers

4 cups of seedless watermelon, cut into 1-inch cubes

1 cup of feta cheese, crumbled

1/4 cup of fresh mint leaves, roughly chopped

2 tablespoons of balsamic glaze or reduction

Salt and freshly cracked black pepper, to taste

12 small skewers or toothpicks

Instructions
 

Prepare the Ingredients: Begin by cutting the watermelon into 1-inch cubes and crumbling the feta cheese. Set both aside.

    Assemble the Skewers: Take your small skewer or toothpick and start by threading a watermelon cube onto it. Next, add a small chunk of feta cheese followed by a mint leaf. Repeat this process until each skewer has about 2 watermelon cubes, 2 feta chunks, and a few mint leaves. Make sure to finish with a watermelon cube on top for presentation.

      Drizzle with Balsamic Glaze: Once all the skewers are assembled, lay them on a serving platter. Drizzle the balsamic glaze over the skewers. Be generous, but not so much that it overpowers the fresh flavors.

        Season: Lightly sprinkle with salt and freshly cracked black pepper to enhance the flavors.

          Chill and Serve: For the best flavor, allow the skewers to chill in the refrigerator for about 15 minutes before serving. Enjoy these refreshing bites as a perfect summer appetizer or snack!
