Ingredients

2 cups watermelon, diced

8 oz flank steak

4 cups mixed greens (arugula, spinach, and romaine)

1/2 cup red onion, thinly sliced

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 cup balsamic glaze

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

Instructions

Prepare the Beef:

    - Season the flank steak with salt, pepper, and garlic powder on both sides.

      - Heat olive oil in a skillet over medium-high heat.

        - Add the flank steak and cook for about 5-7 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 10 minutes before slicing.

          Prepare the Watermelon:

            - While the steak is resting, dice the watermelon into bite-sized cubes and set aside.

              Assemble the Salad:

                - In a large bowl, combine the mixed greens, diced watermelon, sliced red onions, cherry tomatoes, and chopped mint.

                  - Drizzle with balsamic glaze and toss gently to combine, ensuring the greens and fruits are well mixed.

                    Slice the Steak:

                      - Thinly slice the rested flank steak against the grain.

                        Serve:

                          - Divide the salad mixture into bowls or plates. Top each serving with sliced steak and sprinkle with feta cheese.

                            - Drizzle a bit more balsamic glaze over the top if desired, and enjoy!
