1 lb (450g) boneless, skinless chicken breasts, diced

4 cups corn kernels (fresh, frozen, or canned)

1 large onion, finely chopped

3 cloves garlic, minced

2 medium potatoes, peeled and diced

4 cups chicken broth

2 cups whole milk

1 cup heavy cream

3 tablespoons butter

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1/2 cup crispy bacon bits (optional)

Instructions
 

Sauté the Chicken: In a large pot over medium heat, melt 2 tablespoons of butter. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Vegetables: In the same pot, add the remaining tablespoon of butter. Sauté the onion until translucent, approximately 3-4 minutes. Add the garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Stir in the diced potatoes, corn kernels, thyme, paprika, salt, and pepper. Pour in the chicken broth and bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low and let it simmer for about 15 minutes, or until the potatoes are tender.

          Blend for Creaminess (optional): For a creamier texture, use an immersion blender to puree a portion of the chowder (about 1-2 cups for a chunky blend). Alternatively, transfer a portion to a blender and blend until smooth, then return it to the pot.

            Add Cream & Chicken: Stir in the whole milk and heavy cream. Add the sautéed chicken back into the pot. Heat through, stirring occasionally, for about 5 more minutes.

              Adjust Seasoning: Taste and adjust the seasoning with additional salt and pepper as needed.

                Serve: Ladle the chowder into bowls and top with crispy bacon bits (if using) and fresh parsley for a burst of color.
