4 large eggs

1 small bell pepper (red or yellow), diced

1 cup fresh spinach, chopped

1/2 small onion, finely chopped

1/4 cup shredded cheese (cheddar or feta)

1 tablespoon olive oil

Salt and pepper, to taste

4 whole wheat tortillas

Optional toppings: avocado slices, salsa, or hot sauce

Instructions
 

Prep the Veggies: Start by washing and chopping the bell pepper, onion, and spinach. Set aside.

    Whisk the Eggs: In a mixing bowl, crack the eggs and whisk them together with salt and pepper until fully blended.

      Sauté the Vegetables: Heat the olive oil in a non-stick skillet over medium heat. Add the chopped onion and diced bell pepper. Sauté for about 3-4 minutes, until the onion becomes translucent.

        Add Spinach: Stir in the chopped spinach and cook for another 1-2 minutes until wilted.

          Cook the Eggs: Pour the whisked eggs over the sautéed vegetables in the skillet. Gently stir and cook until the eggs are just set, around 3-5 minutes. Sprinkle shredded cheese over the top and let it melt slightly.

            Assemble the Wraps: Lay each tortilla flat. Divide the egg and veggie mixture evenly among the tortillas, placing the filling in the center of each one.

              Wrap It Up: Fold the sides of the tortilla over the filling and then roll it tightly from the bottom to enclose the filling completely.

                Heat for Crispiness (optional): For a crispy wrap, return the wrapped tortillas to the skillet, seam side down, and lightly toast for 1-2 minutes on each side.

                  Serve: Slice the wraps in half and serve warm, garnished with optional toppings like avocado slices, salsa, or hot sauce.
