Vegetarian Baked Beans

2 cups dried navy beans (or your choice of white beans)

4 cups vegetable broth

1 medium onion, finely chopped

4 cloves garlic, minced

1 medium bell pepper (any color), diced

2 carrots, diced

1 celery stalk, diced

1 can (14 oz) diced tomatoes (with juice)

1/3 cup maple syrup

1/4 cup apple cider vinegar

2 tablespoons soy sauce or tamari

1 tablespoon Dijon mustard

1 tablespoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Prepare the Beans: If using dried beans, soak them overnight in plenty of water. The next day, drain and rinse the beans. In a large pot, combine the soaked beans and vegetable broth. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender. Drain and set aside.

    Sauté the Vegetables: In a large oven-safe skillet or Dutch oven over medium heat, add a splash of oil. Sauté the chopped onion, garlic, bell pepper, carrots, and celery for about 5-7 minutes or until the vegetables have softened and the onion is translucent.

      Combine Ingredients: Add the cooked beans, diced tomatoes with their juice, maple syrup, apple cider vinegar, soy sauce, Dijon mustard, smoked paprika, ground cumin, and season with salt and pepper. Stir well to combine all ingredients.

        Bake the Beans: Preheat your oven to 350°F (175°C). Once your oven is ready, cover the skillet with a lid or aluminum foil. Bake the mixture in the preheated oven for 45-60 minutes. If you prefer a thicker consistency, uncover the skillet for the last 15 minutes of baking.

          Serve: Carefully remove the skillet from the oven. Allow it to cool for a few minutes. Serve hot, garnished with fresh parsley or cilantro if desired. Enjoy your hearty baked beans as a main dish or as a side!
