8 oz elbow macaroni (or gluten-free pasta)

1 cup raw cashews (soaked for at least 2 hours)

1/4 cup nutritional yeast

1/2 cup unsweetened almond milk (or any plant-based milk)

2 tbsp olive oil

1 tbsp lemon juice

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh parsley (for garnish, optional)

Instructions
 

Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Creamy Sauce: In a high-speed blender, combine the soaked cashews (drained), nutritional yeast, almond milk, olive oil, lemon juice, garlic powder, onion powder, smoked paprika, salt, and pepper. Blend until completely smooth and creamy. Taste and adjust seasonings as needed.

      Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni with the creamy sauce. Stir well to ensure all the pasta is coated evenly.

        Heat and Serve: Return the pasta and sauce mixture to the pot over low heat. Stir gently until warmed through. This should take about 2-3 minutes; do not overheat.
