1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 cup coconut sugar (or brown sugar)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large ripe banana, mashed

1/2 cup unsweetened applesauce

1/3 cup almond milk (or any plant-based milk)

2 large eggs (or flax eggs for a vegan option)

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (optional, for added indulgence)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Mix Dry Ingredients: In a medium bowl, whisk together whole wheat flour, cocoa powder, coconut sugar, baking powder, baking soda, and salt until fully combined.

      Combine Wet Ingredients: In a separate large bowl, combine the mashed banana, applesauce, almond milk, eggs, and vanilla extract. Whisk until the mixture is smooth and uniform.

        Combine Wet and Dry: Gradually add the dry mixture to the wet mixture. Using a spatula, gently fold together until just combined. Avoid over-mixing; some lumps are okay.

          Add Chocolate Chips and Nuts: If desired, fold in dark chocolate chips and chopped nuts to the batter.

            Scoop into Muffin Tin: Using a spoon or an ice cream scoop, fill each muffin cup about 2/3 full with the batter.
