Ingredients

12 oz linguine pasta

2 tbsp unsalted butter

2 tbsp olive oil

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 medium onion, finely chopped

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tsp smoked paprika

1 tsp ground cumin

1 tsp chili powder

½ tsp cayenne pepper (adjust for heat preference)

1 cup diced tomatoes (canned or fresh)

½ cup heavy cream

½ cup chicken broth

1 tbsp Worcestershire sauce

1 tbsp lemon juice

Salt and black pepper, to taste

Fresh cilantro, chopped, for garnish

Grated Parmesan cheese, for serving

Optional: red pepper flakes, for extra spice

Instructions

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

Prepare the Chicken: In a large skillet, heat the butter and olive oil over medium heat. Add the chicken pieces and season with salt and black pepper. Sauté until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

Sauté Aromatics: In the same skillet, add the chopped onion. Cook until the onion is translucent, about 3-4 minutes. Add minced garlic and grated ginger, cooking for another minute until fragrant.

Add Spices: Stir in the smoked paprika, cumin, chili powder, and cayenne pepper. Toast the spices in the skillet for about 30 seconds to release their flavors.

Create the Sauce: Pour in the diced tomatoes, chicken broth, heavy cream, Worcestershire sauce, and lemon juice. Stir well to combine and allow the mixture to simmer for about 5 minutes, letting it thicken slightly.

Combine Chicken and Pasta: Return the cooked chicken pieces to the skillet. Add the drained linguine to the skillet, tossing everything together. If the sauce is too thick, gradually add reserved pasta water until you achieve your desired consistency.

Adjust Seasoning: Taste the dish and adjust seasoning with salt, black pepper, and additional cayenne or red pepper flakes if desired.

Serve: Garnish with fresh cilantro and a generous sprinkle of grated Parmesan cheese. Serve hot and enjoy the cowboy-inspired flavors!
