1 can (5 oz) of tuna in water, drained

2 tablespoons Greek yogurt (or mayonnaise, if preferred)

1 tablespoon Dijon mustard

1 tablespoon capers, chopped

1 small celery stalk, finely diced

1 tablespoon red onion, finely chopped

1 teaspoon lemon juice

Salt and black pepper, to taste

Fresh parsley or cilantro, for garnish

Optional: cherry tomatoes, halved (for serving)

Instructions

Prep the Avocados: Cut the avocados in half and remove the pits. Scoop out a bit of the avocado flesh to create more room for the filling, and set the scooped avocado aside in a bowl.

Make the Tuna Filling: In a mixing bowl, combine the drained tuna, Greek yogurt (or mayonnaise), Dijon mustard, chopped capers, diced celery, red onion, and lemon juice. Mix until well combined.

Add Avocado: Gently fold the reserved avocado flesh into the tuna mixture for added creaminess. Season with salt and black pepper to taste.

Stuff the Avocados: Generously fill each avocado half with the tuna mixture, mounding it slightly on top.

Garnish and Serve: Top with fresh parsley or cilantro. If desired, serve with halved cherry tomatoes on the side for a refreshing touch.

Enjoy: Serve immediately and enjoy this nutritious and flavorful dish!
