Tropical Pineapple Mocktail Sheet Pan

4 cups fresh pineapple, cut into chunks

1 red bell pepper, diced

1 yellow bell pepper, diced

1 small red onion, sliced

1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 tablespoon fresh lime juice

2 tablespoons honey or agave syrup

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh mint leaves, for garnish

Lime wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sheet Pan: Line a large baking sheet with parchment paper for easy cleanup.

      Mix the Ingredients: In a large mixing bowl, combine the pineapple, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil and lime juice.

        Add the Flavors: Sprinkle in the honey (or agave syrup), smoked paprika, garlic powder, salt, and black pepper. Toss all the ingredients thoroughly until the fruits and vegetables are evenly coated.

          Spread on Sheet Pan: Pour the mixture onto the prepared sheet pan, spreading it out in an even layer for even roasting.

            Roasting: Place the sheet pan in the preheated oven and roast for about 20-25 minutes, stirring halfway through, until the pineapple is caramelized and the vegetables are tender.
