1/2 cup unsalted butter, softened

1 1/2 cups powdered sugar

2 tablespoons heavy cream

1 teaspoon mint extract

10-12 Mint Oreo cookies, crushed

For the Chocolate Ganache Layer:

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

Additional Mint Oreo cookies for garnish (optional)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

    Make the Brownie Layer:

      - In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the granulated sugar until well combined.

        - Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.

          - In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, stirring until just combined.

            - Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and let it cool completely.

              Prepare the Mint Oreo Cream Layer:

                - In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, mixing well.

                  - Add heavy cream and mint extract, beating until light and fluffy for about 2-3 minutes.

                    - Gently fold in the crushed Mint Oreo cookies until evenly distributed.

                      - Once the brownie layer has cooled, spread the mint Oreo cream evenly over the top.

                        Make the Chocolate Ganache Layer:

                                  Chill & Serve:

                                    - Refrigerate the brownies for at least 1-2 hours to set the layers effectively.

                                      - Once set, remove from the pan using the parchment paper and cut into squares.
