2 pints cherry tomatoes

1 block (8 oz) feta cheese

3 tablespoons olive oil

5 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves for garnish

Crusty bread or cooked pasta for serving (optional)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the tomatoes: In a large baking dish, add the cherry tomatoes. Drizzle with 2 tablespoons of olive oil, and season with salt, pepper, oregano, and basil. Toss to coat.

      Add the feta: Place the block of feta cheese in the center of the tomatoes. Drizzle the remaining tablespoon of olive oil over the feta. Sprinkle the red pepper flakes on top for an extra kick.

        Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the tomatoes are bursting and the feta is melted and golden around the edges.

          Add garlic: Once out of the oven, immediately sprinkle the minced garlic over the baked tomatoes and feta. Stir gently to combine, allowing the residual heat to soften the garlic without cooking it.

            Garnish and serve: Top with fresh basil leaves for garnish. Serve warm with crusty bread for dipping or over cooked pasta for a complete meal.
