1 cup couscous

1 ¼ cups vegetable broth (or water)

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 ½ cups cherry tomatoes, halved

1 teaspoon dried basil (or 2 tablespoons fresh basil, chopped)

Salt and pepper to taste

½ cup fresh mozzarella balls, halved (optional for extra creaminess)

Fresh basil leaves for garnish

Zest of 1 lemon (optional, for brightness)

Prepare the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Once boiling, add the couscous, cover, and remove from heat. Let it sit for about 5 minutes, then fluff with a fork.

    Sauté the Aromatics: While the couscous is resting, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until it becomes translucent, about 4-5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

      Add the Tomatoes: Stir in the halved cherry tomatoes and dried basil (if using dried). Cook for 4-5 minutes, allowing the tomatoes to soften and release their juices. If using fresh basil, reserve it for later.

        Combine: Add the cooked couscous to the skillet with the tomato mixture. Gently mix to combine, allowing the couscous to soak up the flavors. Season with salt, pepper, and lemon zest (if using) to taste.
