14 oz firm tofu, pressed and drained

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

For the Mango Slaw:

1 ripe mango, diced

2 cups shredded red cabbage

1 cup shredded carrots

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon honey (or maple syrup for vegan option)

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

1 avocado, sliced

Lime wedges for serving

Additional cilantro for garnish

Instructions
 

Prep the Tofu:

    - Cut the pressed tofu into small cubes or strips.

      - In a bowl, whisk together soy sauce, lime juice, olive oil, cumin, smoked paprika, garlic powder, salt, and pepper.

        - Toss the tofu in the marinade, ensuring all pieces are well-coated. Let it marinate for at least 15 minutes.

          Make the Mango Slaw:

            - In a large bowl, combine diced mango, shredded cabbage, shredded carrots, and chopped cilantro.

              - In a small bowl, whisk together lime juice, honey (or maple syrup), salt, and pepper. Drizzle this dressing over the slaw mixture and toss gently to combine. Set aside.

                Cook the Tofu:

                  - Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu in a single layer.

                    - Cook for about 4-5 minutes on each side until the tofu is golden brown and slightly crispy. Remove from heat.

                      Warm the Tortillas:
