Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

2 large eggs

1 cup canned pumpkin puree (not pumpkin pie filling)

1 teaspoon vanilla extract

½ cup buttermilk (or regular milk with a splash of vinegar)

½ cup walnuts or pecans, chopped (optional)

½ cup chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, spices (cinnamon, nutmeg, ginger, cloves), and salt. Set aside.

Cream Butter & Sugars: In a large mixing bowl, use an electric mixer to cream the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).

Add Eggs & Pumpkin: Add the eggs to the butter mixture one at a time, mixing well after each addition. Then, mix in the pumpkin puree and vanilla extract until fully combined.

Combine Wet & Dry Ingredients: Gradually incorporate the dry ingredient mixture into the wet mixture, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined; be careful not to overmix.

Fold in Nuts/Chocolate Chips: If desired, gently fold in the chopped nuts and chocolate chips using a spatula for added texture and flavor.

Pour & Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Cool & Serve: Let the pumpkin bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature. Enjoy with a pat of butter or cream cheese!
