Ingredients

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

1 cup whole milk

1/4 cup vegetable oil

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Optional toppings: whipped cream, fresh berries, maple syrup, chocolate syrup

Instructions

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until well combined.

In a separate bowl, beat the egg and then add the milk, vegetable oil, and vanilla extract. Mix until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to over-mix; small lumps are okay.

        Fold in the chocolate chips.

Preheat a non-stick griddle or frying pan over medium heat. You can lightly grease it with cooking spray or a small amount of butter if desired.

Pour about 1/4 cup of batter onto the hot surface for each pancake. Cook for 2-3 minutes or until bubbles form on the surface and the edges begin to look set.

Flip the pancakes and cook for an additional 2-3 minutes until cooked through and slightly puffed up. Adjust the heat if necessary to prevent burning.

Remove pancakes from the pan and keep warm while you cook the remaining batter.

Serve warm with your choice of toppings like whipped cream, fresh berries, maple syrup, or a drizzle of chocolate syrup.
