2 medium zucchinis

1 cup panko breadcrumbs

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

    Prepare the Zucchini: Wash the zucchinis thoroughly and dry them with a paper towel. Slice them into thin rounds, about ¼ inch thick. You can also use a mandoline slicer for uniform thickness.

      Set Up the Breading Station: In a shallow bowl, whisk the eggs until fully combined. In another shallow bowl, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.

        Coat the Zucchini Rounds: Dip each zucchini slice into the egg, making sure it's fully coated, then transfer it to the breadcrumb mixture. Press the breadcrumbs onto each slice to ensure an even coating. Place the breaded zucchini chips onto the prepared baking sheet in a single layer.
