1 lb Italian sausage (or ground beef for a lighter option)

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 can (15 oz) tomato sauce

4 cups chicken broth (or vegetable broth)

2 tsp dried oregano

1 tsp dried basil

1 tsp red pepper flakes (optional)

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus more for topping

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage (or ground beef) and cook until browned, breaking it apart with a spoon. Drain excess grease if necessary.

    Add diced onion to the pot and sauté for about 3-4 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Pour in the crushed tomatoes, tomato sauce, and chicken broth. Stir well to combine. Season with dried oregano, dried basil, red pepper flakes, salt, and pepper to taste.

        Bring the mixture to a boil, then reduce the heat to a simmer. Add the broken lasagna noodles to the pot and cook for about 10-12 minutes, or until they are tender.

          While the noodles are cooking, in a separate bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, and a pinch of salt and pepper. Mix until smooth.

            Once the lasagna noodles are cooked, remove the soup from heat. Distribute the ricotta mixture into bowls of the soup, allowing it to melt into the hot broth.

              Serve the lasagna soup in bowls, topped with extra shredded mozzarella cheese and fresh herbs like basil or parsley for garnish.
