Ingredients

2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans, chopped)

1/2 cup honey or maple syrup

1/2 cup nut butter (such as almond, peanut, or cashew)

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup dried fruits (cranberries, raisins, or apricots, chopped)

1/4 cup chocolate chips or dark chocolate chunks (optional)

1/4 cup seeds (pumpkin or sunflower seeds for added crunch)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

Toast the Oats and Nuts: Spread the rolled oats and mixed nuts evenly on a baking sheet. Toast in the preheated oven for about 10-12 minutes, stirring halfway through, until lightly golden and fragrant. Remove from oven and allow to cool slightly.

Prepare the Wet Mixture: In a medium saucepan over low heat, combine the honey (or maple syrup), nut butter, and salt. Stir continuously until the mixture is smooth and heated through, about 2-3 minutes. Remove from heat and mix in the vanilla extract.

Combine Ingredients: In a large mixing bowl, combine the toasted oats and nuts, dried fruits, chocolate chips (if using), and seeds. Pour the warm nut butter and honey mixture over the dry ingredients, and stir until everything is well coated and combined.

Press into the Baking Dish: Transfer the granola mixture to the lined baking dish. Using a spatula or your hands (moistened for easier pressing), firmly press the mixture into an even layer. Make sure it's packed tightly to prevent crumbling when cut.

Chill and Set: Place the baking dish in the refrigerator to set for at least 1 hour. This helps the bars firm up for easier slicing.

Slice and Store: Once set, lift the granola slab out of the dish by the parchment overhang. Place on a cutting board and cut into rectangular bars or squares as desired. Store in an airtight container at room temperature for up to one week, or in the freezer for longer storage.
