For the Sushi Rice:

1 cup sushi rice

1 1/4 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

For the Spicy Tuna Filling:

8 oz sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon Sriracha or more, to taste

1 teaspoon soy sauce

1 green onion, finely chopped

1 teaspoon sesame oil

For Assembly:

4 pieces of nori (seaweed sheets)

1 small cucumber, julienned

1 avocado, sliced

1 large carrot, shredded

Pickled ginger, for garnish

Sesame seeds, for garnish

Extra Sriracha for serving (optional)

Instructions
 

Prepare the Sushi Rice:

    Rinse the sushi rice under cold water until the water runs clear. Drain and combine it with 1 1/4 cups of water in a rice cooker. Alternatively, bring to a boil in a saucepan, then reduce to low heat, cover with a lid, and cook for about 18-20 minutes until tender.

      Season the Rice:

        While the rice is cooking, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Once the rice is done, transfer it to a bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

          Make the Spicy Tuna:

            In a separate bowl, combine diced tuna, mayonnaise, Sriracha, soy sauce, green onion, and sesame oil. Mix until all ingredients are well combined. Adjust Sriracha according to your desired spice level.

              Assembling the Onigirazu:

                - Place a piece of nori shiny side down on a clean surface or sushi mat.

                  - With wet hands, grab a handful of cooled sushi rice (about 1/2 cup) and press it gently into the center of the nori, forming a square (about 4-5 inches wide).

                    - Layer some spicy tuna mixture, a few cucumber sticks, avocado slices, and shredded carrot on top of the rice.

                      - Add another small handful of sushi rice on top of the filling.

                        Fold the Nori:

                          Carefully fold the sides of the nori up and over the filling, then the top and bottom, to create a sealed sandwich-like shape. You can secure it with a little water or even a thin strip of additional nori.

                            Grill for Extra Flavor (Optional):

                              For an added crunch and to enhance the flavor, place the onigirazu seam-side down on a hot skillet over medium heat, toasting for 2-3 minutes on each side until crispy.

                                Serve:
